Garnish with pumpkin seeds and pumpkin seed oil. Pumpkin seed oil can be found at Whole Foods Market or any gourmet food store. If you’re one of the lucky ones, they carry it in your local grocery store.
Serve this soup with a pear and walnut spinach salad (check back).
